I prefer fried turkey over any other method of cooking, however smoked is darn close.
When I do mine I make darn sure the turkey is thawed. I generally take it outside still in the plastic and stick it in my fryer pot. Then add water till the turkey is covered by about half an inch. Mark that as my oil level. Then take out the turkey and pour off the water, dry the pot very very well. Add oil to the mark. When the oil is nearing 400 degrees (I loike to get a real good sear on my bird) I take the turkey out of the plastic and wash it well with the water hose (keep it close in case of fire). Dry the turkey very very well, make sure to remove giblets and the plastic that holds the legs together and the popout thingy. Use butcher cord to tie anything you want tied up, some people like to tie wings and legs tight to bird it helps to keep them from getting overcooked. GO SLOW when dropping the bird in the oil and when some oil boils out and catches fire don't panic, it generally burns right off... you can turn the gas off until it does if you so desire (I have and I haven't depending on the amount of oil that comes out)
You can use the pot and burner to boil peanuts or a crab or shrimp boil, you can deep fry just about anything you can think of tho the only thing I have ever done is the turkey.
I prefer peanut oil, it seems to give a very slightly sweet taste but I have used plain ole wesson oil (son in law said that was the best turkey he had ever eaten). I have had a few inlaws get fryers once they ate some of my turkey (one even got herself an indoor electric fryer since her hubby has a tendency to start a fire with his gas fryer). I have had mine catch fire... I just let it burn the oil off since I do it outside in the yard or driveway.
First time my wife cooked a turkey I was amazed at the temps she used 500 degrees to start. Then I talked her into using a paper sack for her next one to keep moisture in. Not so long after that we were introduced to frying and I can not recall ever doing anything different since.

We do ours on the grill with charcoal and apple smoking chips. It's my job, my wife takes care of the rest. Had an opportunity to learn about brining this year, so the bird has been sittin in the soup the last couple of days. My mouth is watering just thinking about it.
Happy thanksgiving everyone! Be safe.

That's got me thinking... I bet you could fry anything on the thanksgiving table.
Scoops of dressing (thanksgiving hush puppies)
Sweet potatoes (no marshmallows)
Breaded broccoli and rice balls
Green beans
Apple dumplings
Pumpkin pie (oh might not work but someone can try.)
Someone keep adding to the listThe only thing better than having all the guns and ammo you'd ever need would be being able to shoot it all off the back porch.
Want to see what will be the end of our country as we know it???
